Ingredients:

8 green chiles, roasted, peeled and chopped – about 2 cups

2 pounds lean pork, cut into 1-1/2 inch cubes

2 tablespoons vegetable oil

2 large onions, chopped

2 cloves garlic, minced

2 small tomatoes, peeled and chopped

1 large potato, diced

1 quart beef broth

Directions:

Brown pork in oil.  Remove from heat and drain.  Add onion and garlic to oil and saute until soft.  Place all ingredients in a pot and simmer for 2 hours, or until the meat is tender.

Serving Suggestions:

Warm flour tortillas, fried corn tortilla strips, poached eggs and cheddar cheese.
